Kale Ceasar

This kale salad is sooooo good! Three years ago I would never have thought I’d be into raw kale, but I am now! You just have to know how to treat it…. So, let’s get personal. You have to massage your kale! I’m serious! It make a huge difference, massaging with olive oil breaks down the fibers a bit so the leaves aren’t so tough. Let me back up, first I cut the rib out, then I cut the kale across the leaf really thin, then I wash it and spin it. Now I do the massage, then I let it sit out for about an hour, it will not go limp like lettuce, it gets better. Now for the dressing…
In a blender,
take about 3 tbsp. of pine nuts and pulse til crumbly, set aside (this will add a nice contrasting texture)
1-2 cloves garlic
a fresh squeezed  lemon
a dash of soy sauce
about 3 tbsp of mayo
cracked pepper
while the blender is running, slowly drizzle in about a 1/4 cup of olive oil
dash of red wine vinegar

Toss kale with the creamy dressing and the crumbled pine nuts. Sometimes I also add a little fresh grated parmesan, your call. Bon appetit!
